Colorado Chimichangas

 Ingredients:
  • 1 - 1 1/2 pounds ground turkey
  • 1 package taco seasoning
  • 1 teaspoon ground cumin
  • 2 teaspoons chopped fresh oregano
  • 2 tablespoons chopped fresh cilantro
  • 2 4-ounce cans green chiles
  • 1/2 cup salsa
  • 2 green onions
  • 1/2 cup low-fat sour cream
  • 1/2 cup shredded Cheddar cheese
  • 4 tablespoons butter
  • 10 fajita-size flour tortillas
  • 1/2 cup shredded Cheddar cheese

Garnishes (Optional):
  • 1 cup chopped tomatoes
  • 1 1/2 cups shredded lettuce
  • 1 cup shredded cheese
  • 1 cup guacamole
  • 1 cup salsa
  • 1 cup sour cream

Directions:
  1. Preheat oven to 450 degrees.
  2. Cook turkey with taco seasoning according to directions on seasoning packet.  
  3. Add cumin, oregano, cilantro, chiles, salsa, green onions, sour cream, and 1/2 cup Cheddar cheese.  
  4. Melt butter in a microwave.  
  5. Warm stack of tortillas in microwave for 30 - 45 seconds.
  6. Lay tortillas on wax paper and brush both sides with melted butter.
  7. Spoon 1/3 cup filling into center of each tortilla and fold envelope style.  Place tortillas, seam-side down, in a greased 9x13-inch pan. 
  8. Bake for 20-25 minutes or until golden brown.
  9. Sprinkle with cheese and return to oven to melt cheese.  
  10. Serve with garnishes as desired.
