Fresh Peach Bellinis


Ingredients:

  • 2 ripe peaches, unpeeled, pitted, and diced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon sugar
  • 1 bottle (750 ml) chilled Prosecco sparkling wine
Directions:

  1. Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth.
  2. Press the mixture through a sieve and discard the peach solids in the sieve.  
  3. Place 2 tablespoons of the peach puree in each of the champagne glasses and fill with cold Prosecco. Serve immediately
Note:  Must use super sweet peaches!


Yield: 4-6 servings
