- 3/4 cup chopped pecans
- 1/2 cup margarine or butter
- 1/4 cup brown sugar
- 1 egg yolk
- 1 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla
- Mix margarine and brown sugar until creamy. Add yolk. Gradually add flour, salt, and vanilla. Form dough into 1" balls.
- Roll into beaten egg white and then pecans.
- Bake at 375 degrees for 5 minutes. Punch cookie in center and return into the oven for 8 minutes.
