- 1 - 1 1/2 pounds ground turkey
- 1 package taco seasoning
- 1 teaspoon ground cumin
- 2 teaspoons chopped fresh oregano
- 2 tablespoons chopped fresh cilantro
- 2 4-ounce cans green chiles
- 1/2 cup salsa
- 2 green onions
- 1/2 cup low-fat sour cream
- 1/2 cup shredded Cheddar cheese
- 4 tablespoons butter
- 10 fajita-size flour tortillas
- 1/2 cup shredded Cheddar cheese
Garnishes (Optional):
- 1 cup chopped tomatoes
- 1 1/2 cups shredded lettuce
- 1 cup shredded cheese
- 1 cup guacamole
- 1 cup salsa
- 1 cup sour cream
Directions:
- Preheat oven to 450 degrees.
- Cook turkey with taco seasoning according to directions on seasoning packet.
- Add cumin, oregano, cilantro, chiles, salsa, green onions, sour cream, and 1/2 cup Cheddar cheese.
- Melt butter in a microwave.
- Warm stack of tortillas in microwave for 30 - 45 seconds.
- Lay tortillas on wax paper and brush both sides with melted butter.
- Spoon 1/3 cup filling into center of each tortilla and fold envelope style. Place tortillas, seam-side down, in a greased 9x13-inch pan.
- Bake for 20-25 minutes or until golden brown.
- Sprinkle with cheese and return to oven to melt cheese.
- Serve with garnishes as desired.
