Dressing:
- 2 tablespoons apple juice concentrate
- 1 tablespoon apple cider vinegar
- 1 tablespoon white balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- 1/3 cup olive oil
Salad:
- mixed greens
- thinly sliced red onions
- pecans
- Gorgonzola cheese
- apple chips
- roasted, shredded chicken breasts (I sprinkled mine with lemon pepper, sea salt, garlic powder, and dried basil before roasting in the oven.)
Directions:
- To make dressing, combine whisk together all ingredients.
- Assemble salad and top with desired amount of dressing.
