Ambrosia Macaroons

Ingredients:
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 2 teaspoons finely grated orange peel (I used a bit more..it smells so yummy!)
  • 3 large eggs
  • 24 ounces sweetened flaked coconut (6 cups firmly packed)
  • 6 ounces bittersweet chocolate, melted
Directions:
  1. Preheat oven to 325 degrees and line 3 large baking sheets with parchment paper.
  2. Mix butter until smooth.
  3. Add sugar and salt; beat until blended.
  4. Beat in orange peel.
  5. Add eggs one at a time.
  6. Mix in coconut.
  7. Drop batter onto sheets. (I made balls.)
  8. Bake one sheet at a time for 25-30 minutes or until golden on bottom and brown in spots.
  9. Cool completely on sheets.
  10. Drizzle chocolate over macaroons.
  11. Chill on sheets until firm, about 30 minutes.
Yield: 45 macaroons
