Oatmeal S'Mores Cookies


 

Ingredients:
  • 2/3 cup mini marshmallows
  • 2 cups old-fashioned oats
  • 1 1/3 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup packed brown sugar
  • 3/4 cup butter, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tablespoon honey
  • 1 teaspoon vanilla
  • 1 cup semisweet chocolate chips
  • 1 small jar marshmallow creme
Directions:
  1. Cut marshmallows in half.  Spread on baking sheet; freeze 1 hour.
  2. Preheat oven to 350 F.  Line cookie sheets with parchment paper.
  3. Combine oats, flour, baking soda, baking powder, and salt in a medium bowl; set aside.  Beat brown sugar, butter, and granulated sugar in a bowl of electric stand mixer at medium speed until well blended.  Beat at high speed until light and fluffy.  Add egg, honey, and vanilla to mixer bowl; beat at medium speed until well blended.  Gradually add flour mixture; beat just until blended.  Stir in chocolate chips and marshmallows.
  4. Roll dough into small balls and place on prepared baking sheets.  Bake 8-9 minutes or until puffed and golden.  Cool 5 minutes on cookie sheets before removing and transferring to wire racks to cool.
  5. Once cooled, spread marshmallow creme onto flat side of one cookie.  Place flat side of another cookie on top to create a sandwich.  
Yield: 40+ cookies or 20+ sandwiches 

Notes:  Freezing the marshmallows didn't seem to keep them from melting in the oven.  Also, I spread Nutella between the sandwiches along with the marshmallow creme and it seemed to overpower the cookie.
