Zucchini Pie



Ingredients:

  • 3 cups zucchini, grated
  • 1 small onion, chopped
  • 1 cup flour
  • 1 cup provolone cheese, grated
  • 3 eggs, beaten
  • 1/4 cup vegetable oil
  • 4 tablespoons Parmesan, grated
  • 2 teaspoons fresh basil, chopped
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 freshly ground black pepper

Directions:
  1. Preheat oven to 350 degrees.  
  2. Combine all the ingredients in a large bowl, reserving 1 T. of the Parmesan.  
  3. Spoon the zucchini mixture into a 10-inch round glass pie plate or a metal pie pan that has been coated with vegetable cooking spray.  
  4. Bake for 45 to 50 minutes or until golden brown.  
  5. Sprinkle with the reserved Parmesan.  
  6. Cool 10 to 15 minutes before slicing.
