Ambrosia Macaroons
Ingredients:
- 1/2 cup unsalted butter, room temperature
- 3/4 cup sugar
- 1/8 teaspoon salt
- 2 teaspoons finely grated orange peel (I used a bit more..it smells so yummy!)
- 3 large eggs
- 24 ounces sweetened flaked coconut (6 cups firmly packed)
- 6 ounces bittersweet chocolate, melted
Directions:
- Preheat oven to 325 degrees and line 3 large baking sheets with parchment paper.
- Mix butter until smooth.
- Add sugar and salt; beat until blended.
- Beat in orange peel.
- Add eggs one at a time.
- Mix in coconut.
- Drop batter onto sheets. (I made balls.)
- Bake one sheet at a time for 25-30 minutes or until golden on bottom and brown in spots.
- Cool completely on sheets.
- Drizzle chocolate over macaroons.
- Chill on sheets until firm, about 30 minutes.
Yield: 45 macaroons
