- 2/3 cup mini marshmallows
- 2 cups old-fashioned oats
- 1 1/3 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup packed brown sugar
- 3/4 cup butter, softened
- 1/4 cup granulated sugar
- 1 egg
- 1 tablespoon honey
- 1 teaspoon vanilla
- 1 cup semisweet chocolate chips
- 1 small jar marshmallow creme
Directions:
- Cut marshmallows in half. Spread on baking sheet; freeze 1 hour.
- Preheat oven to 350 F. Line cookie sheets with parchment paper.
- Combine oats, flour, baking soda, baking powder, and salt in a medium bowl; set aside. Beat brown sugar, butter, and granulated sugar in a bowl of electric stand mixer at medium speed until well blended. Beat at high speed until light and fluffy. Add egg, honey, and vanilla to mixer bowl; beat at medium speed until well blended. Gradually add flour mixture; beat just until blended. Stir in chocolate chips and marshmallows.
- Roll dough into small balls and place on prepared baking sheets. Bake 8-9 minutes or until puffed and golden. Cool 5 minutes on cookie sheets before removing and transferring to wire racks to cool.
- Once cooled, spread marshmallow creme onto flat side of one cookie. Place flat side of another cookie on top to create a sandwich.
Notes: Freezing the marshmallows didn't seem to keep them from melting in the oven. Also, I spread Nutella between the sandwiches along with the marshmallow creme and it seemed to overpower the cookie.
