- 1/3 cup pine nuts
- 1 1/2 pounds fresh green beans, cut into 1/2-inch pieces
- 1 1/2 teaspoons finely grated lemon zest
- 2 tablespoons fresh flat-leaf parsley, chopped
- 4 teaspoons olive oil
- salt and pepper to taste
Directions:
- Toast pine nuts in a hot skillet.
- Cook beans in salted boiling water for 7 minutes or until just tender; drain.
- Toss hot beans in a bowl with lemon zest, parsley, olive oil, and toasted pine nuts. Season with salt and pepper.
