Mediterranean Green Beans



Ingredients:
  • 1/3 cup pine nuts
  • 1 1/2 pounds fresh green beans, cut into 1/2-inch pieces
  • 1 1/2 teaspoons finely grated lemon zest
  • 2 tablespoons fresh flat-leaf parsley, chopped
  • 4 teaspoons olive oil
  • salt and pepper to taste
Directions:
  1. Toast pine nuts in a hot skillet.  
  2. Cook beans in salted boiling water for 7 minutes or until just tender; drain.  
  3. Toss hot beans in a bowl with lemon zest, parsley, olive oil, and toasted pine nuts.  Season with salt and pepper.
