Grilled Chicken Satay with Peanut Sauce



Ingredients:
  • ½ cup chunky peanut butter (no salt or sugar added)
  • ½ cup peanut oil
  • ¼ cup white wine vinegar
  • ¼ cup tamari (or soy sauce)
  • ¼ cup fresh lemon juice
  • 4 garlic cloves, minced
  • 8 cilantro sprigs, minced
  • 2 teaspoons dried red pepper flakes
  • 2 teaspoons chopped fresh ginger


Directions:
  1. Combine all ingredients in a blender or food processor. Blend well to emulsify, adding a few drops of water if the mixture is too thick. Reserve some of the marinade for a dipping sauce. Marinate chicken overnight. 
  2. To create satay skewers, thread thin, 1-inch wide slices of marinated chicken onto wood skewers and grill them 2 minutes per side. 
  3. Serve grilled chicken skewers with reserved marinade as a dipping sauce.
