Southwest Pork Tenderloin

Ingredients:
  • ½ cup fresh lime juice
  • 6 tablespoons low sodium soy sauce
  • ¼ cup olive oil
  • 2 tablespoons sugar
  • 2 tablespoons chopped fresh oregano
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon minced garlic
  • ½ cup chopped fresh cilantro 
  • ½ teaspoon cayenne pepper
  • 1 ½ teaspoons chili powder freshly ground pepper
  • 2 1 pound pork tenderloins, trimmed
Directions:
  1. Combine all ingredients except pork in a bowl and whisk together. Set aside ¼ cup of marinade for sauce.  Pour remainder of marinade into a gallon-size zip-top bag.  Add pork to bag and seal.  Refrigerate overnight, turning bag once.
     
  2. When ready to cook, preheat grill.  Remove pork from bag; discard marinade in bag.  Grill pork for 20 minutes or until barely pink in the center.  Let meat rest for 5 minutes after removing from grill.  Slice and serve with reserved marinade drizzled over the top.
     
*This marinade works great on chicken, too!

Yield: 4-6 portions
Prep: less than 30 minutes  Grill: 20 minutes
