Ingredients:
- ½ cup chunky peanut butter (no salt or sugar added)
- ½ cup peanut oil
- ¼ cup white wine vinegar
- ¼ cup tamari (or soy sauce)
- ¼ cup fresh lemon juice
- 4 garlic cloves, minced
- 8 cilantro sprigs, minced
- 2 teaspoons dried red pepper flakes
- 2 teaspoons chopped fresh ginger
Directions:
- Combine all ingredients in a blender or food processor. Blend well to emulsify, adding a few drops of water if the mixture is too thick. Reserve some of the marinade for a dipping sauce. Marinate chicken overnight.
- To create satay skewers, thread thin, 1-inch wide slices of marinated chicken onto wood skewers and grill them 2 minutes per side.
- Serve grilled chicken skewers with reserved marinade as a dipping sauce.
