- ½ cup fresh lime juice
- 6 tablespoons low sodium soy sauce
- ¼ cup olive oil
- 2 tablespoons sugar
- 2 tablespoons chopped fresh oregano
- 2 tablespoons chopped fresh rosemary
- 1 tablespoon minced garlic
- ½ cup chopped fresh cilantro
- ½ teaspoon cayenne pepper
- 1 ½ teaspoons chili powder freshly ground pepper
- 2 1 pound pork tenderloins, trimmed
- Combine all ingredients except pork in a bowl and whisk together. Set aside ¼ cup of marinade for sauce. Pour remainder of marinade into a gallon-size zip-top bag. Add pork to bag and seal. Refrigerate overnight, turning bag once.
- When ready to cook, preheat grill. Remove pork from bag; discard marinade in bag. Grill pork for 20 minutes or until barely pink in the center. Let meat rest for 5 minutes after removing from grill. Slice and serve with reserved marinade drizzled over the top.
